Pumpkin Kheer
A sweet dish or a thin pudding, popular in India. Kheer is made with milk, sugar and addition of any one of the following:
Rice, wheat, vegetables, fruits, nuts or daals.
This pumkin kheer is spiced up with pumpkin pie spice powder.
Ingredients
1 small Pie Pumpkin ( approximately 500 gms )
2 cups milk
4-6 tablespoons sugar or maple syrup
1/2 a teaspoon pumpkin pie spice powder
a few strands of saffron
For garnish
1 cinnamon stick
whipped cream
dusting of Pumpkin pie spice
Steps
For the pumpkin puree
Peel the pumpkin, cut into half and scoop the seeds and the fiber using a spoon.
Chop into cubes.
Heat 1/2 cup of water in a saucepan. Add the pumpkin pieces and cook closed for 15 - 20 minutes or till tender.
Add this to a blender and blend into a smooth paste.
For the kheer
Heat a pan, add the milk. Add the pumkin puree and bring it to a boil.
Add sugar to taste, saffron, and pumpkin pie spice. Mix well and heat through.
Garnish with a cinnamon stick, whipped cream and dusting of pumpkin pie spice .
Serve hot or cold. Enjoy!
