Moong Sprouts Salad

A light refreshing salad that can be served anytime of the day . This salad is dressed up with " Chaat Masala ", a spice blend and coconut oil.

Cucumbers can be  added to this sald.

Ingredients

Chaat masala

  • 1/2 teaspoon coriander seeds

  • 1/2 teaspoon fennel seeds

  • 1 green cardamom seeded

  • 2 cloves

  • 1 small piece of cinnamon

  • 1/2 teaspoon ajwain ( carom seeds )

  • 1/2 teaspoon pepper

  • 1/2 teaspoon dry mint leaves

  • 1/2 teaspoon cumin seeds

  • 1/4 teaspoon black salt

  • 1 small dry mango piece ( 1/2 teaspoon mango powder )

Salad

  • 4 ounces moong sprouts

  • 1/2 cup boiled peanuts

  • 1 small tomato chopped

  • 1/2 to 1 avacado chopped

  • 1/4 cup finely chopped cilantro

  • 1 -2 teaspoons chaat masala

  • juice of 1 small lemon

  • 1 tablespoon coconut oil

  • 2 green chilies chopped ( optional )

  • 1 teaspoon sugar ( optional )

  • salt to taste

Steps

Chaat Masala

  1. Toast the spices in a dry pan till slightly brown. Blend into a fine powder.

Salad

  1. Boil the peanuts in an instant pot for 6 minutes. Strain the liquid and keep aside.

  2. Bring water to a boil in a saucepan. Switch off the stove, add the sprouts and immediately drain it. Keep aside.

  3. To a bowl, add the sprouts, boiled peanuts, chopped tomato , chopped avocado, chopped cilantro, chaat masala, lemon juice, coconut oil and salt to taste. Add green chilies and sugar if needed. Mix well and serve immediately .
