Grilled Shrimp

In this recipe the shrimp is marinated with fresh roasted and ground spices. Coconut milk  and brown sugar are  added to mellow the heat from the spices. Cilantro adds an extra herbal flavor to this dish.

Serve hot with "Ghee Rice" and " Roasted Veggies".

Ingredients

  • 2 lbs ( 2 kgs approx ) shrimp

  • spice powder ( recipe below )

  • cilantro paste ( recipe below )

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon brown sugar

  • 2 tablespoons lemon juice

  • salt to taste

  • 1 tablespoon oil

  • 2 tablespoons ghee or clarified butter


Spice Powder

  • 1 tablespoons coriander seeds

  • 1 teaspoon fennel seeds

  • 1  teaspoons cumin seeds

  • 1/2 teaspoon black pepper

  • 4 cloves

  • 1 piece cinnamon

  • 1 cardamom


Cilantro paste

  • 1/2 cup cilantro

  • 4-6 garlic cloves

  • 1" piece ginger 

  • 2 green chillies

  • 1/2 cup coconut milk

Steps


  1. Spice mix - Heat a small pan. Add the corinder seeds and fry for a min. Then add the rest of the spices and toast till golden and it starts crackling. Grind these spices into a fine powder. This will be the spice powder.

  2. Cilantro paste - To a blender add the cilantro, coconut milk, garlic, ginger and green chili and make a fine paste.

  3. To the shrimp , add the salt, turmeric powder, brown sugar, spice powder, lemon juice and the cilantro paste. Marinate for atleast 25 -  30 mins.

  4. Heat a grill pan. When the pan is hot drizzle a litte bit of oil and ghee. Place the shrimp and cook for 2 mins and flip it around and cook for 2mins. Do not cook too long, the shrimp get rubbery and chewy.

  5. Once you see a char on the top , remove the shrimp. 

  6. Clean the pan with a paper towel and cook the remaining shrimp.
