Chocolate Molten Cake
A delicious chocolate cake firm on the sides with a soft center.
Serve this warm with a dollop of icecream and raspberries.
Ingredients
8 oz semi - sweet chocolate baking bars
4 oz dark chocolate chips
2 sticks butter ( 1 cup butter )
4 whole eggs and 4 yolks
1/2 cup brown sugar
1 teaspoon vanilla
a pinch of salt
2 - 3 tablespoons cocoa powder
Steps
Pre-heat the oven to 425° F
Grease 8 - 4 oz ramekins with butter and coat with cocoa powder. Keep this aside.
Melt the chocolate and butter in a double boiler. For the double boiler, boil water in a saucpan and simmer . Place a bowl on top of the saucepan.
Add the semi - sweet chocolate , dark chocolate chips and butter to the bowl and let it melt.
Whisk whole eggs, egg yolks and sugar in a bowl till pale in color and doubled in volume.
Once the chocolate and butter is melted let it cool for a while.
Add the melted chocolte to the whisked egg - sugar mixture.
Whisk well.
Add vanilla and salt and mix well.
Add the flour and fold in till there are no white specks.
Divide this equally into the ramekins and bake in the oven for
8 - 10 minutes.
The cake has to be firm on the sides with a soft center.
Let it stand for a minute and loosen the cake with a knife.
Place on dessert plates and serve hot with a dollop of icecream and raspberries.
